Fermented heering, surstromming is baltic heering. This canned heering is slightly salted and then ferment in the cans.
The method of preservation was invented long ago, when brining food was hard beacuse salt was hard to get. When fermentation was used, on the other hand, just enough salt was required to keep the fermented heering from rottening.
